I will tell you that I have considered undertaking canning. Really, really, really considered it. Then got scared because I don&#039;t want to undertake some huge new stupid thing and then suck at it or hate it and then feel stupid because I bought all the tongs and stuff. BUT... I feel the same way you described about making cheese... although... canning can be done really healthy depending on what you&#039;re canning. Making cheese always results in cheese being about. Cheese makes me fat. Cause I could eat a pound of it in one setting if I wanted to. But the desire to know how to make it is definitely pressing. I see restaurants that make their own ricotta and mozzarella and I&#039;m like WOW! And then there&#039;s those little guys at the market with their whole booth full of cheese they made and I&#039;m like I could do that. Except that I can&#039;t. So, maybe we shouldn&#039;t pick. Maybe you should do canning and THEN cheese. Or both at the same time, I don&#039;t care. But do them both, pleeeeease!</description>
